Can I freeze celery for stocks?

Well…. I already did. I had some celery AND carrots in my freezer for about a month and a half and after I defrosted my celery it lost its weight and durability and isn’t as firm, some slight brown spots but I plan on roasting them in the oven a bit before putting it in my stock. Is that safe?
