Tough White Stuff Inside Plantain

Hi there, I've cooked with plantains a handful of times before, so I'm familiar with what the inside of one should look like in various stages of ripeness. I made maduros tonight and as I was cutting the plantain up I came across this tough white substance streaking near the middle. I didn't think much of it and just continued on. When I was eating them it was very obvious the slices that had a decent chunk of this stuff were not completely edible. I had to eat around the white stuff. I'll attach a picture from before I cooked them. Does anyone know what this stuff is? Baking soda and powder questions

If you dip a measuring spoon into baking soda and baking powder,after using it for wet ingredients such as eggs and vanilla essence(wiping it clean),will baking soda become spoilt or mouldy? From what I know the baking soda and powder is used for baking purposes only,at the bakery. My salt is too big for my grinder

is there a grinder I can use for large, flat/square ish salt crystals? I thought I won a jackpot finding this coarse, iodized salt for so cheap at an Asian market but it turns out it's too big for my grinder.
