Press Box salad.

I'm trying to find an authentic recipe for Press Box salad. This was an upstate NY delicacy served at the Press Box restaurant, which the owner must have invented (and also slapped down at your table and told you to be finished by the time she got back from noonday Mass).

There are varying accounts of what it contained, but the basics are lettuce, cherry tomatoes, hard boiled eggs, beets, orange segments, ham, shredded cheese, chicken, red onion, and pepperoncinis. The dressing is what's hard to determine, it was an oil and vinegar base with either heavy oregano or Italian seasoning.

Does anyone out there know it and know how to make it? There are some restaurants around the area that serve them but they never get it quite right. I am trying to find someone who would know exactly how she made it. Thank you.
