Probably a stupid question but here goes:
I pan fried chicken thighs on med-high 4 mins on one side 3 on the other. I then took the pan off the heat and checked the temp of the thicker part of the thigh 75c....great. I left it to rest and then i was seeing low 60s - is that normal or should it be reading at mid 70s?
Slight beginner on me so go easy...or not
