I've tried making this cheese in all kinds of ways, but I feel like there's something that's slipping me (I should know, I'm coming up on my 13th attempt now). I've tried varying the time between 3-6 mins. I've tried whisking lightly and whisking very agressively and all the in between. I've subbed my lemon juice from concentrate with actual palped lemon juice. I've tried using pillowcases (apparently Chatgpt says that it's the same material used to make it traditionally, idk). I've also tried monitoring the heat, but the readings I get in the mixture are uneven even after I stir it, I don't know what's up with that. But besides 1 accidental win, I could only muster batches with a gooey center and the actually product coating the sides. If anyone has run into this problem or knows the solution to my problem, I'd appreciate it.
