To marinade or not to marinade, that is the question

Is marinating a scam? Probably not but is it useful? Not always, no.

I've been cooking with shrimp recently and I can't say marinating them is as useful as it seems especially for shell on shrimps.

For one, the flavours do not penetrate into the flesh and to cook the shrimp *and* cook the spices long enough is a trade off, you can't easily or effectively do both.

I prefer making a really good sauce or cooked seasoning and then adding the shrimps to cook and coat them

For stuff like chicken, it's a different issue - certain marination works and in others a dusting works better.

What is a common "marination" myth a lot of cooks support but actually do not help in the slightest m
