Which Method(s) Would You Suggest For Cooking Leftover Chicken so That Its Not Dry?

This is a pretty general question, but which method(s) do you suggest for cooking leftover chicken so that it isnt dry?

My parents usually pan-fry it with leftover vegetables or use it in a fried noodle or rice. It usually ok, but its usually pretty dry. Im assuming that my best bet would be braising it?
