Help my tweak this recipe for my bf!!

1/4 CUP EXTRA-VIRGIN OLIVE OIL

1 POUND YUKON GOLD POTATOES, PEELED, CUT INTO 1/2-INCH CHUNKS

12 OUNCES SWEET ITALIAN SAUSAGE, REMOVED FROM CASINGS

1 MEDIUM ONION, CHOPPED

KOSHER SALT

PEPERONCINO FLAKES

1 1/2 CUPS DRY WHITE WINE

2 TEASPOONS CHOPPED FRESH THYME LEAVES

2 POUNDS MUSSELS, SCRUBBED

1/4 CUP CHOPPED FRESH ITALIAN PARSLEY

I’m need to clear out my freezer because i’m moving soon and tonight I am eliminating two pounds of frozen mussels(not a lot of meat in them) and as much sausage as possible (i have a TON of mild Italian sausage in there and i don’t remember even getting it). I’m cooking for my boyfriend and sister, but my boyfriend does not really like mussels as a meal that much. I think it’s because he doesn’t feel it’s enough food. Does anyone have any tips on how to make this hardier, maybe turning it into soup? I’d rather not do cream, but I’m willing to consider it. I’m more than willing to go any other route besides that, tho!
