Hey Chefs, I was just hired at a new restaurant that is still in the middle of remodeling. They have a very old upright salamander broiler. It not in the greatest condition and we had someone look at it who said it might be better to replace. I was mainly going to cook steak with it but may need to see other options. Any advice on what to look at, mainly for cooking steaks?
