Thoughts about making a bread pudding out of deli rye

Several times family members have brought over deli food. They keep bringing WAY too much sliced rye.

I make my own bread (including ryes) and always have some around, so I keep tossing the bagged rye into the chest freezer to use... later. So I have two bags, each the near equivalent of a full loaf, and was thinking about making a bread pudding.

What flavors would go well with this? I was thinking sliced apples. I was going to make a "light" custard--cream can be a little rich for my taste. Not trying to cut calories, just a personal preference.

Or would a savory bread pudding be better? Cheese, mushrooms, onions... I'd love to use salmon but, unfortunately, I'm the only one here who eats it.
