Ingredients:
• 2–3 eggplants (preferably fresh and juicy)
• Salt
• 70 ml olive oil
• Thyme — for aroma
• 3 garlic cloves
• 2 bell peppers
• 300 grams of ground meat

• Black pepper to taste
• 300 ml tomato paste
• 100 grams of mozzarella
• 2 ripe tomatoes
Preparation:

Cut the eggplants lengthwise and sprinkle with salt. Let them sit for 5–10 minutes to release their juices and reduce bitterness.

In a small bowl, mix the olive oil with minced garlic and thyme. Generously brush this aromatic mixture onto the eggplants.
