I am trying to make Italian rainbow cookies for this year's Feast of the Seven Fishes but they need to be both gluten free (for 5 of us with Celiac) and nut free for my daughter who is allergic to all nuts. I've found plenty of recipes that can easily be adapted to GF, but am hung up on how to substitute almond paste. Any recommendations for a nut free almond paste?
