Why is my cheese so crumbly?

I was making homemade mozzarella cheese following this recipe: https://www.youtube.com/watch?v=aewWUjnPSAs

After gathering the curds and forming it into a ball, the cheese began to crumble and break into smaller pieces.

I used cream-o-land whole milk and bogopa white vinegar, and I did not add salt. Why did it become so crumbly?
