Salting veggies

I understand the concept of salting cucumbers to remove excess moisture, or salting eggplant to remove some bitterness, and I know much of the salt gets removed after. What I want to know is how much is left. In other words, if I'm watching my salt intake, is this something I should look out for, or does enough of it get removed to not worry about?
