I'm in a big pinch. In-laws are visiting any minute now and I volunteered to make Alison Roman's braised shortribs. The just went in the oven at 325, where the recipe calls for them to sit for 2.5-3 hours before roasting at a higher temp. I don't want to sacrifice any more tenderness or quality than I have to, but can i realistically pump up the heat a little to cut the cooking time?
