Why is white fish always coming out soggy?

I used to make a killer broiled cod and flounder. It was easy and effortless. And im pretty sure they all came frozen, and i broiled them from frozen as well as per instructions. It turned out amazing consistently.

In the last two years, no matter what i do, where i buy it from, all the white fish i broil turns out soggy and pink (i always check internal temp and i often go slightly over)

Today i broiled some ocean perch, patted dry, seasoned, coat in mustard/mayo, coat in seasoned panko, and broil until its done and crispy on top. Came out AWFUL. Im so over spending my money and time on food that cannot be eaten.

What gives?? I really love fish with pasta and salad and i feel like its just not in the stars for my family anymore 😭
