I have to bring a food to an office potluck for 15 people. The only microwave is super tiny so heating up food for a crowd is not ideal. I was thinking a crockpot meal would be nice. The other people in my office are making amazing sounding foods from their cultures, like Dominican shepherds pie with plantains and Filipino pancit and Jamaican brown stew chicken. So I’d like to step it up beyond basic crockpot stuff like chili or velveeta dips.
Can anyone recommend a more refined dish I can either make in the crockpot or make ahead and at least keep warm in the crockpot? TIA!!
