Would maple vinaigrette go good with this?

Hi! I’m planning on making a simple sheet pan meal for dinner tonight: roasted potatoes, broccoli, bell pepper, and chicken apple gouda sausage. My hold up is that I am very very picky about sauces/dressings and find that most foods don’t need them. But stuff like this always feels incomplete without a sauce. I do not like anything with vinegar, mustard, or mayo, hence why I am picky about sauces. I was thinking of a maple sauce with real maple syrup, lemon juice, garlic, and olive oil. So my questions are 1) would this pair well with my meal? 2) what proportions of each ingredient should I use? Thanks!
