Help me make my dream mashed potatoes!

Hello, I have been trying to recreate the mashed potatoes they serve at Chili’s Grill & Bar. They are just perfect but every recipe I try, nothing comes close (def not with milk), the texture scratches an itch I didn’t know I had.
For the potatoes I dont have access to Yukon gold (only white potatoes) could that be it? But Chili’s mashed potatoes look white to me. Im hoping someone else is familiar with the flavor and can guide me the right way.
Creamy but firm, not buttery. Peel and potato chunks.
