I cook a lot but can often find that I am quite limited to my "north american" spices and ingredients. I do have a strong collection of spices but, again, I often end up using the same few for any dish.
I frequently wish to just have a big list of "X region uses A, B, C spices" but struggle to find this online. Usually I find one or two sites that list just the very common ones. Or Some website called 'simple eats' or something akin to that which I do not trust for anything authentic. I don't really need spice mixes, I like to create my own, I just want to use spices that a cuisine might really use. Thanks.
