Most neutral tasting nut/ plant based cream for a savory recipe ?

I used unsweetened almond milk but it smelled like cotton candy and practically ruined this amazing dish. I read soy and oat cream might just add the hint of creamy fat flavor instead without any extra . Thanks for some advice
