Why the meat I cook always not tasty?

I encounter this problem mostly with those dishes that use sauces and meat. For example, the Sweet and Sour Ribs dish that I cook require pouring sauce after you finish searing the ribs. When finished, the ribs only have the taste of about 40% flavor of the sauce. The sauce I made really tasty, but the meat can't have that tastiness after cooking. I feel like I made the flavor of the meat got out into the sauce instead making it in the opposite way.
But the funny thing is, if I let the dish around for like 3 hours, and then taste it, it got really tasty then. So what is wrong with my cooking?
