What exactly is in a stock cube?

I believe the gelatinous little pots are probably something that resembles actual stock but what's in those little brown oxo cubes? What is beef extract? Is it made from roasted beef bones or is it spinal fluid and cow rectum?

I want to know because I basically use them to season everything since I developed heart issues and had to switch to a low cholesterol diet with mostly Veggie meals and occasional turkey mince based things. They seem to give an umami hit and a taste of beef nostalgia that I just can't accomplish with fish sauce and porcine mushrooms
