I'll be making carnitas tacos for a large bachelor party group at an Airbnb and I'm not sure what cookware will be available. The plan is to cube a ~5lb pork shoulder and slow cook it in the oven covered in liquid/oil, which I usually do in a heavy dutch oven with a lid at home. Worst case scenario, there is not a suitable vessel and I have to use disposable foil pans. I would plan to double up the pans and put them on a sheet tray for structural support.
Not trying to fuck around and find out it's a terrible idea. Anyone have experience slow cooking meat in disposable pans? It seems like it would work reasonably well but maybe take a bit longer?
