I accidentally overbaked ny cheesecake to a point of black top - decided to taste top part before throwing it out and it was most amazing thing I have ever eaten

Not sure how it works but I ate whole top part alone, it was that good (with bit of custard of course). Then I researched about basque burned cheesecake which used similar ingredients and apparently it is a thing. How come cheesecake can even burn at the top?
