So, I have a few Italian dishes that call for Pecorino cheese. It's usually paired with Parmigiano-Reggiano. However, nobody in my household likes the peppery flavor of Pecorino. Everything I look up for a good replacement tries to mimic the peppery flavor. So, what would be a good substitute that isn't so peppery?
I have a really quick Carbonara recipe that I can make fairly quickly and it's light and easy. However, It always comes out to peppery for our tastes and I tried to use less Pecorino and more Parm. However, then it gets to much Parm and starts to move closer to an alfredo.
Or is there a way to temper the pepper flavor so it isn't so intense.
