i have a siphon, a silicone mould and a freezer, can i make a mousse that holds it's shape once thawed?

I have methylcellullose, xanthan gum, gellan gum, Agar Agar, glucose powder, dextrose powder, isomalt powder and various acids at hand... I can go buy some fruits or veggies or whatever but I was just thinking about if i could whip something up if you know what i mean
