Do herbs benefit from gentle heat?

I know some herbs and lemon juice should be added "off heat" since the heat degrades their flavor. If I'm meal-preping food that I plan to keep in the fridge, would it be best to wait until the food has completely cooled and is ready to go into the fridge before adding final herbs/lemon juice? Or do they benefit from the "gentle heat" that a dish would have right when you take it off heat?
