How to reduce the bitterness of Brussels Sprouts

I have an idea on preparing some brussels sprouts in an Indian style as a side dish or appetizer. The plan is to blanch them in boiling water, drain, smash, and toss with ghee and garam masala, then coat with panko and put them in the air fryer until crispy, serve with a little tamarind sauce.

I'm looking for suggestions on how to tame the bitterness inherent in brussels sprouts. Thx
