Extra mint?

I have about 2 handfuls of tightly bundled mint right now. I don't always have fresh herbs on hand so I am very grateful I have this. How would you best take advantage of it while it is fresh? Should I just try not to waste any of it by drying it out before I use it? I have several recipes in mind, but this is still too much. Any ideas out there in how to keep it fresh or what else I should do? Thanks in advance.
