Ruined cast iron seasoning cooking fajitas. Where did I go wrong?

Had a new seasoning going in my 12” cast iron pan. After finishing fajita dinner, returned to a pan covered in a stubborn, charred crust which only came off with heavy scrubbing. Where did I go wrong?

  • Heated 1 TBSP oil over med high heat
  • Added chicken and cooked 3mins a side, then transferred to plate to tent
  • While pan still hot, added veggies (bell peppers and onions marinated in soy sauce, lime juice, canola oil, and spices)
  • Let veggies cook for 2 minutes undisturbed, then flipped
  • Let veggies cook for another 2 minutes undisturbed, then flipped
  • Let veggies cook for 1 more minute, flipped, removed pan from heat and added chicken back on top
  • Served dinner out of pan, ate, returned to pan in 20 mins to package leftovers. Discovered crust and ruined pan

I was not sure which flair to pick here, hope this works.
