What are some cuts of meat/preparations of meat that result in melty fat?

Occasionally, I can find great pork shoulder/pork knuckle that has an area in it that's almost like a melted fat layer/pocket. It's delicious! It's not every piece, though- is there anything that is like that, but consistently?
