Refrigerating burger patties day ahead

I'd like to charbroil some burgers this Sunday, to save time I was planning to grind, form and store the patties on Saturday. Is there any issue with storing them in the refrigerator overnight?

I'd like to cook the burgers to 125F and I'm afraid having the meat sit in the refrigerator overnight could increase the chances of food poisoning/spoilage. I don't want to store the patties in the freezer (I think this would negatively impact the texture and flavor?).
