For clarification, this is an actual Mexican joint, not Tex-Mex. This is literally Mom cooking recipes just like her grandma made them back home in Mexico where she grew up. Recently my husband started picking up burritos for lunch occasionally. These are made with ground meat but it clearly is different. The texture is different and the taste is just somehow meatier / beefier. Am I probably right in guessing they're adding in some ground organ meat or even using all ground organ meat?
We love lengua tacos and liver pate, so not a problem if this is likely what is going on. Just genuinely curious.
