Correcting Bell pepper flavour in soup

My MIL just dropped off some leftover turkey dinner soup and.... it’s not great. She threw together the leftovers including red peppers and an Indian-style(?) Salad(?) dish Someone made. Tastes like bell peppers, broccoli and maybe a bit of lemon. Turkey flavours are lacking. My partner and I don’t like it in its current state but we don’t want to throw away. Any suggestions?
