Lamb Shoulder came out tough

Hi all sorry for perhaps repetitive post but I bought a new slow cooker / sous vide machine so to celebrate I rendered a beautiful shoulder in a pan and rubbed it with a rosemary oil.

8 hours later it came out pink. Nice, not tough but not pull apart like I'd imagined. This new slow cooker has a lid that seals with lock down clips and was thinking perhaps the seal was too tight and so it just kind of steamed in it's own sweat instead of cooking like a normal loose slow cooker lid.

Worried that future attempts will result in similar non-pull apart dinners and like, that's the whole reason I use a slow cooker.
