Ways to use eye of round that aren't roasting?

I got an eye of round. Cut it in half. Roasted it according to a highly reviewed recipe (500F for an hour then turn off oven let sit for three hours). Turned out medium rare, but it was possibly the toughest piece of meat I've ever eaten.

So what are some things I can make with this other half? Really leaning towards stew. Any other ideas?
