Best way to store/reheat polenta after it's cooked?

Making some polenta tonight to put under a pot roast. I'm going to follow Daniel Gritzer's YT video on it. But, once its ready to serve, can I just turn off the heat, cover, and let sit for 30-45 mins while we eat? And how should I reheat it from fridge? Thank you!
