Central American meat spices/marinades?

A few years ago I was in Miami and we stopped at a Central American restaurant. I'm not 100% sure if it was Honduran or Nicaraguan kitchen, but I'm sure it was one of the Central American countries. I had a plate with some roast pork and the flavor and taste of the pork was just great. I could definitely taste garlic and citrus, but there were some spices in there that I could not easily pin-point. I wanted to make something in that tradition for my family get together next week.

What are the usual suspects, as far as spices go, for preparing pork in that part of the world?
