Vacuum sealing, do I dry the meat first?

I love my vacuum sealer, like I'm sure many of us do. But now I'm wondering if I need to dry the meat or stick the plastic sheet thing from the meat packet in there because I get a lot of overflow with things like mince and steak.

Will this affect the meat? Do I have to find a way to prevent it?
