Beer Cheese Dip

Hello, I'm planning on making a beer cheese dip for a party just curious on a few things. First off, I've heard people say you need to let the beer get flat before incorporating it into the dip. Is that true or should I pour it from a fresh bottle? Second, what brand of beer would you recommend (non-IPA because some people don't like those. I've never had one)? And finally, to get it to be a bit more runny, I know water is an option, but could I just use more beer or does water work better? Thanks, everyone.
