Pastrami was taken out of the oven for a couple hours

Inlaws took my 8 lb pastrami out of the oven at hour 3 (of 8) and went back around 2 hours after. It was brined for 5 days. Basically just wondering if you all think it's salvageable or should it be pitched? Thank you all
